~ Apple Cloud Cake ~

I’ve definitely had my fair share of having a sweet tooth. As I’m sure most of us have. The times where we crave something sugary. A cookie, cake, danishes, chocolates. Then there are also the times where we have to discipline ourselves yet still crave that sweet something to devour while questioning ourselves with options.

Today, I’m sharing a healthy alternative with you. Only requires 3 ingredients! No baking in the oven needed. No added sugars or any of the processed ingredients that goes along with a lot of the food these days.

Apple cloud cake. I love apples, especially the juicy sweet ones. I was a little hesitant at first if I’d even like this or not but I thought I’d give it a try. I’m so glad I did! It gives you the perfect amount of sweetness without the added sugar!

Supplies & ingredients needed:

*1.3 lbs of apples peeled– I used 7 small apples.

*1/2 cup of water

*1.4 ounces of gelatin powder unflavored- I used 5 packets

*Small pot

*Measuring cup

*Whisk

*Electric mixer – if you do not have one, you can do this the old fashioned way… by hand with a whisk. It just may take awhile.

*Rubber Spatula – with the gelatin it gets sticky , the rubber spatula worked better for me.

*Parchment paper

*8×8 glass pan

*Cutting board

*Peeler

*Knife

*Potato masher or food processor

Step 1:

Peel and dice the apples into small cubes.

Step 2:

In a small pot, combine the diced apples and 1/2 cup of water.

Cook on low-medium heat for 10 minutes. Stirring occasionally.

I could tell the apples were ready when the color of the apple changed a tiny bit & the texture softened.

Step 3:

This is the hardest part out of the whole thing. Mashing the apples.

My first try at this the first batch I made, was chunky. I was going to redo it but I liked the added texture.

** Now I know, I know, why go through all this work when I could have just bought a jar of apple sauce and nixed the water. If you’d like to do that you can. I prefer making the applesauce so I do not get any of the processed stuff in my food. It’s healthier for you, plus I’m on an anti inflammatory diet, the less processed for me, the better.

If you choose to use apple sauce instead, you can use the following –

** 1 large jar of applesauce

** 5 packets of unflavored gelatin powder

  • Following the same steps to make the cloud cake.

Step 4:

Once the apples are mashed, pour them into a bowl.

Add the gelatin.

Mix away.

Keep mixing

And mixing

You will mix for approximately 20-30 minutes. It is done when the mixture will turn white in color and look kinda like the soft peak of meringue. Kind of “fluffy” looking.

Pretty much, you will get to the point when you will mix for so so long that you start to think you did it wrong because it’s taking too long to mix… THATS WHEN YOU KNOW YOUR DONE ! 😁 🎉

Step 5:

Line the pan with parchment paper.

Pour the batter into the pan.

Cover with foil or plastic wrap and put in the fridge for about 4 hrs. I’ve read you can keep it in the fridge overnight also.

When it’s finishing, the apple cloud cake has a jello texture to it.

Regular Apple Cloud Cake

IDEAS 💡

** For added flavor try mixing in a couple teaspoons of cinnamon. Tastes almost like apple pie.

** Sprinkle cinnamon on top.

** Poke holes in the cake and add lemon filling

** Add vanilla for extra flavor

** Don’t mash the apples all the way and leave it a little chunky for texture.
