
Throughout the western expansion, the people were in a hurry to get to their destinations. They had to carry everything that could sustain them along the way. Corn meal, being one of their bulk items.
Traveling over long distances, with no food trucks, restaurants or pit stops either. So they needed to be completely self sufficient. Now, if you’ve heard of John Wayne then you may have heard of “Corn Dodgers”. A Corn Dodger was a really quick & easy recipe that they could pull over, whip up, eat and move on.
Let’s whip up some Corn Dodgers!
Supplies and ingredients needed:
• 2 cups corn meal
• 2 Tablespoons coconut oil
• 1/2 teaspoon salt
• 2 Tablespoons brown sugar
• 2 cups milk
• 1 teaspoon baking powder
• cast iron or regular skillet
• Pot
• Spoon
• measuring cups
• Tablespoon & teaspoon
Step 1:
Heat the milk and salt slowly in the pot. Heat it until just before it starts to boil.
Step 2:
Reduce the heat and add the cornmeal and sugar a little at a time, stirring frequently. You are going to cook it till it just begins to thicken.
Step 3:

Remove from heat and quickly stir in the baking powder.
Now allow the dough to rest for about 5 minutes.
Step 3:
While the dough is resting, add the coconut oil in the skillet.
Once the oil is melted and heated up, take a spoon and drop balls of the dough into the skillet.
Fry approx. 5-10 minutes per side.
Corn dodgers are done when they are light brown and crispy.
Repeat until all the dough is cooked.

Toppings:
These can be served with a meal., like biscuits & gravy or as a side or even as a snack.
You can put:
• Butter
• Jelly
• Maple syrup
• Nut butter
• Honey
• Cinnamon
• Fruit toppings
