
As we cut our fruit and vegetables for our meals, we tend to waste parts of the food. Such as potato peels, carrot shavings or the ends, apple peels, celery leaves.
Did you know, the U.S is the top contenders to food waste? On average, we waste about a 1/3 of all food grown for consumption? Just goes in the garbage. Even food as simple as peels and leaves from vegys.
Here, I am sharing a few ways we can use celery leaves in our meals.
1. Substitute for an herb. Chop up the celery leaves and use in a meal in substitute of basil or cilantro. The possibilities are endless for herbs.
2. Make pesto. Purée the celery leaves and use to make pesto.
3. Soups & stews. Cut up the celery leaves and use in soup or stews.
4. Breakfast. Cut up the celery leaves and mix them in your scrambled eggs in the morning or in a omelette.
5. Smoothies. You can include the celery leaves in your smoothies. Who doesn’t love a good smoothie?
6. Regrow . You can cut the ends of the celery stalk and wrap them up and put it in your fridge. When ready, take them out, fill a shallow dish with 1/2” of water and put the end of the celery in. Sit in a window sill for a few days. When the celery begins to grow new shoots, peel of the outer layer of the celery that’s starting to brown. Replace back in the water.
Once it starts to grow roots, you can put it in a pot with dirt or transplant outside in your garden.
