One of the most delicious recipes!

I’ll admit, I’ve had such a sweet tooth lately! For today’s deliciousness, Lemon curd.

Lemon curd first started approx in 1844. Also known as lemon cheese. You can use it as a desert, or a filling for pastries, a topping for waffles and crepes, topping for scones or a filling for cake.

Prep time 5 minutes

Cook time 15 minutes

Supplies needed:

  • 3 large eggs
  • 1 cup sugar
  • 1/2 cup lemon juice (about 2 lemons)
  • 1/4 cup butter, cubed
  • 1 tablespoon grated lemon zest

Step 1:

In a small heavy saucepan over medium heat, whisk eggs, sugar and lemon juice until blended. Add butter and lemon zest; cook, whisking constantly, until mixture is thickened and coats the back of a metal spoon. Transfer to a small bowl; cool 10 minutes. Refrigerate, covered, until cold.
