The Old Frontier

The Old Frontier, also known as the American Wild West, was a period during the 1800s centered around westward American expansion. It began with European colonial settlers moving into territories newly acquired through the Louisiana Purchase of 1803.

With limited resources, they often had to get creative with cooking meals. They had to farm, hunt, buy & trade for food; BUT they did eat hearty.

I am starting a new series of learning from the “old days”. Today I am sharing a delicious recipe that they called back then, “Hoecakes”. Also known as “Johnny Cakes” and even “cornmeal flatbread/pancakes”.

Hoecakes are very tasty! The only downside would be they are fried. When we all have our days of nothing to eat in the house, there really IS something to eat. We just have to think outside the box.

Hoecakes

Ingredients needed:

  • 1 1/2 cups cornmeal
  • 2/3 cups buttermilk or you can use regular milk
  • 1 egg
  • 1/2 teaspoon salt
  • 2/3 cup oil

Cook time- 15 minutes

Servings- Approx. 10 hoecakes

Step 1:

Mix cornmeal, milk, egg and salt together. Drop by spoonful into hot oil. Brown on one side then turn and fry until golden brown on both sides. Just like pancakes.

Serve with butter , maple syrup, honey, the choice is yours!
